Chicken Mozzarella Meatballs with Bertolli® Riserva

In my house it is pretty universal that everyone's favorite food is pasta, especially when topped with sauce! Because of my busy schedule I usually don't have time to make my own sauce so we turn to Bertolli® for a authentic and delicious flavor! 

Recently while shopping in my local grocery store I noticed a new line from Bertolli® called Bertolli® Riserva! As soon as I saw it I knew that I had to try it. These sauces are made with specialty ingredients to add unique flavors and help to elevate meals!

As soon as I picked up the Balsamic Vinegar & Caramelized Onions flavor of Bertolli® Riserva I had so many different recipes to make with it running through my head. I finally decided on Mozzarella Stuffed Meatballs. I love making meals that bring my family together to eat around the table and I knew that this would be perfect. I also knew that the flavors of the ingredients in this sauce would make these meatballs even more delicious! 

1 lb ground chicken
1/4 cup finely chopped white onion
1/4 cup Parmesan cheese, grated
1 cup breadcrumbs (we use Italian style)
2 tbsp finely chopped parsley
1 tsp salt
1 tsp pepper
1 egg
mozzarella (cut into cubes or balls)

Combine all ingredients except mozzarella and sauce in a bowl until thoroughly combined. Put a bit of the mixture into your hand, put a piece of mozzarella into the meat mixture, and roll into a ball. Continue until all meat is used. Once all of my meatballs are made I like to roll them in breadcrumbs again to give a bit of a crust, but it is not necessary. In a pan heat olive oil and add the meatballs; cook until brown. While the meatballs are cooking cover the bottom of a pan with sauce. Once the meatballs are done place them in the baking pan and cover with sauce. We love to top them with a bit of mozzarella cheese too! Bake in the over at 400 degrees F for twenty minutes.
