Parmesan Chicken and Veggies over Angel Hair Pasta Recipe!

In my house we eat lots of chicken and pasta since they are family favorites. I love finding tasty ways to make dishes out of these ingredients. One of my favorite dinners using chicken and pasta is Parmesan Chicken & Veggies over Angel Hair Pasta. This recipe is quick, simple, and delicious. I hope that your family enjoys this recipe as much as mine does.

2 tbsp olive oil
3 boneless, skinless, chicken breasts, cut into cubes
12 baby carrots, thinly sliced
1 - 10oz package frozen broccoli florets
2 cloves garlic, minced
1 tsp dried basil
1/4 cup grated Parmesan cheese
1 cup chicken broth (more if you prefer)
1 box angel hair pasta

To start heat one tablespoon of oil in a medium skillet and add the chicken. Cook until chicken is cooked through and browned, about ten minutes. Remove chicken from skillet. Heat the other one tablespoon of oil in the same skillet. Add carrot slices to the skillet and cook, stirring occasionally, for five minutes. Add the garlic and the broccoli to the skillet and cook for five minutes longer.

Start the water for the pasta and let boil while you finish up the chicken and veggies. Add the Parmesan cheese to the skillet. Next add the chicken broth and dried basil. Stir to combine.

Add the chicken to the veggie and broth mixture and simmer for ten minutes. Cook pasta while the chicken and veggies are simmering.Once the pasta is done cooking drain it and divide onto plates or put in a large serving bowl. Top with chicken, veggies, and broth.
