Apple Crisp Cupcakes Recipe! - Alexandra




Thanksgiving is right around the corner so I am sure that many of you, like myself, are thinking Thanksgiving menu planning! Typically on Thanksgiving we have a classic spread of turkey and sides for dinner and get creative for dessert! Of course we have the classic pies (pumpkin and apple), we usually have cheesecake, but we love to add in some fun new desserts. One of my recipes that has been a huge hit are my Apple Crisp Cupcakes! The cupcakes are moist and fluffy with an oat filling! The recipe is below. This recipe yields 18 cupcakes!


The first step in making these cupcakes is to make the cake batter!

1 1/2 cups All Purpose Flour
1 1/2 tsp Baking Powder
1/4 tsp Salt
1 cup Sugar
1/2 Cup Unsalted Butter - Melted
2 Eggs
1/2 tsp Vanilla
1/3 cup Apple Cider
1 Apple - Peeled, Cored, Diced

In a mixing bowl combine the all purpose flour, baking powder, and salt; stir together with a fork. Next cream melted butter, eggs, vanilla, and sugar together. Gradually add the flour mixture alternating with the apple cider; once done add the apple pieces.


Once your cake mix is done put a layer into each section of the cupcake pan. I use a teaspoon and to make sure there is not to much and that it covers the bottom fully. 


Once each section of the cupcake tin is filled the next step is to make the crisp filling!

6 tbsp Unsalted Butter - Melted
1/2 cup Oatmeal
1/2 cup Brown Sugar
1/3 cup All Purpose Flour
2 tsp Cinnamon

Combine all dry ingredients in a bowl and mix gently. Pour the melted butter over the dry mixture and use a spoon to combine well. 


Once the crisp mixture is done it is time to put it inside the cupcakes! Roll small balls of the mixture together and place in the center of each section of the cupcake tin. Once each section has some of the mixture in it is time to cover it with some more cake mix. Using the teaspoon put some more cake mix over the crisp mixture. You do not need too much, just enough to cover the ball, usually a teaspoon full.

Once you are done with all three steps of making the cupcakes Bake for around 20 minutes on 350 degrees. Be sure to keep an eye on them, they make take a bit longer or a bit shorter. When they are golden brown they are ready to come out. 


Now it is time to make a Cinnamon frosting! I am going to tell you the recipe that I typically use, but it is give or take a bit until it is the consistency and taste that you are looking for!

Powdered Sugar - I keep 3 cups on hand for this frosting
2 sticks Unsalted Butter - Softened
2 - 4 tsp Cinnamon - Varies by Taste
1 tsp Vanilla Extract
2 - 6 tbsp Milk - Varies by Consistency

First cream the butter using a mixer. Next slowly add one cup of powdered sugar and mix, then add in  two tbsp milk, your cinnamon, and the vanilla extract. Until desired taste and consistency is reached add more milk, cinnamon, and powdered sugar. Once done frost your cupcakes! (These cupcakes are also great with store bought vanilla frosting, you could even add some cinnamon from your pantry in for a spiced taste!)
